I have to say the best place to get all your mxs custom stuff is definitely TM factory racing. at the moment these guys keep an up to date list of all the latest tracks, riding gear and bikes. its a very organised site! well done guys!
http://www.tmfactory-racing.com/

also theres the mx simulator  forums http://forum.mxsimulator.com/ and puremxs http://www.puremxs.com/. but both are pretty disorganised. also www.mxmaniacs.com has some stuff but not many people upload there.

OK, my install is a year or two old...
When I first tried it, they were just starting to add HD rims, tires, full models, etc.
The MXS forums are littered with old info - how about a quick guide to the essentials?

What do you recommend we download to get started?

At the moment I'm working on a wiki for mxs, but first thing you need is to update the game, you need to install all updates in order from the version you purchased.  Then search the forums and download all the current models, also try looking on pure Mxs. Then go to tm factory racing and download all the skins you want and also all the tracks, I'd recommend all the AMA Sx tracks from 2010 to  2013. Also the AMA mx tracks. Dont forget to put them in your personal folder. Also don't forget to turn on the shaders!!

Game Updates are here..

Latest "Snapshot" = (Patch)

Like Al said,  Download all the updates you require and then once you're fully updated, get the "snapshot".

Models (most of this stuff is actually pretty up to date)

MX Sim Pits http://www.mxsimpits.com  also has the odd model that might not be available elsewhere, and as Al mentioned..
TM Factory http://www.tmfactory-racing.com/  has a great collection.

You may also find that when you download a set of skins, the models you need may already be included in the *.SAF file.  To find out if this is the case, you can open up the SAF in Notepadd++, and there will be a list of the name of the files that are included in the SAF.  The models are .JM format.  If you get the rider model by P2STA, you should be good for most skins.

These "SAF" files are suposed to be a way of packaging the files up to keep things tidy, and stop people getting the contents from inside.  Funny thing is, these are ridiculously easy to open up.  You will see when you open them up in Notepad, nothing has been encoded or compressed.  You can simply whip out your Hex editor, and a few seconds later, you can extract whatever you want.

Why is this useful?  Well you will find that some of the bikes models come with a multitude of skins included.  I find it helpful to just extract the skins I actually want to use, because it saves space, and makes them easy to locate in the game menu.

Also I forgot to mention, when you are fully updated, go into your personal folder, and delete the folder named 'buddscreek'.  (Windows Start Menu / Programs / MX Simulator / MX
Simulator Personal Folder)   The reason for this, is so that you can race the track online without being disconnected from the server.

Any tracks and skins you download also go into the personal folder.  But you probably already knew that. :P

Edit :  I also have a track to recommend - 2013 Lommel.  You will find the link on TM Factory, under GP tracks.  This is a very fun track for a beginner.  As you know, it is deep sand, and due to the traction settings, it means that the bike handling is much more forgiving than that of the regular tracks.  I found that this track allowed me to push the bike pretty hard without the fear of falling off as much.  The other GP tracks from 2013 are also of a high quality, and not too difficult to ride either.
